People have suggested that the inside of barrels were originally burnt to remove the leftover flavors of goods previously stored within, which sounds reasonable enough.
However today we know that the wood sugars are caramelized when heavily burned, and thus they leach into the whiskey. Aging whiskey (like bourbon) in charred barrels results in a smoother, mellower flavor.
We started Holtz Leather Co. after suffering some of the lowest points in our life.
